Series: Palm Oil Recipes To Try At Home – August

Summer is winding down, and this time of the year, certain fruits and vegetables are bountiful. Summer berries may be beginning to shift out of season, and apple season is right around the corner, but late August has many in-season crops waiting to be harvested, cooked, and enjoyed. This month, our Palm Done Right recipe series is going to focus on a late summer star crop – summer squash. Roast these colorful bite-sized treats in the oven with red palm oil for a snack or vegetable dish that is both delicious, and healthy!

Red Palm Oil Roasted Zucchini & Yellow Squash

Ingredients:

  • 2 large zucchinis or yellow squashes (or one of each) – rinsed & chopped
  • 1 tsp. of dried or fresh oregano
  • ½ tsp. of dried sage
  • 2 Tbsp. of red palm oil, melted

As you can see, this recipe only requires a few ingredients, and it will only take you about 55 minutes to make!

Instructions:

  • Set your oven to preheat at 375 degrees F.
  • Oil a baking sheet or line one with parchment paper
  • Take your chopped squash, herbs, and melted red palm oil and combine in large bowl, toss until all squash is covered
  • Pour all contents of bowl onto your baking sheet
  • Place in oven and bake for 45 minutes, stirring occasionally
  • Remove from oven and let cool slightly, serve hot
