Many people don’t realize what an incredible ingredient palm oil is because of the bad reputation that it carries. But if you’re sourcing your palm oil from good, ethical manufacturers, there is no reason not to cook with it. If you are new to using palm oil as a staple in your kitchen, you can follow our new series exploring palm oil recipes that you can try at home.

 

Coconut Lime Palm Ice Cream

This delicious Senegalese inspired ice cream is sweet, unique, and craveable.

Ingredients:

  • two cups coconut milk (full-fat works best)
  • three tablespoons lime zest
  • one teaspoon orange flower water
  • four large egg yolks
  • two thirds cup sugar
  • three quarter cup red palm oil
  • half teaspoon salt

Instructions:

  • Combine the orange flower water, coconut milk, lime zest, and salt in a saucepan.
  • Cook over medium heat for about five minutes until boiling. Then, set aside to cool.
  • beat the sugar and egg yolks on medium speed for 3 to 5 minutes in an electric mixer, until thick. Reduce the speed to low. Then, beat in the palm oil until blended, about 2 minutes.
  • bring the coconut milk mixture back to a simmer. slowly add the coconut milk to the egg and sugar mixture and mix until well blended.
  • Pour custard back into the saucepan and cook medium heat, stirring constantly, for about five minutes. custard should be thick enough to coat the back of the spatula.
  • Using a fine-mesh sieve, strain the custard into a large bowl. Set aside until cool.
  • Pour the custard into an ice cream maker and process according to the manufacturer’s instructions.
  • Pour ice cream into an airtight container and store in the freezer for up to three days.
