Don’t feel like having eggs one morning? Easily use this palm oil when just sauteing vegetables, or for a more dinnertime recipe when making vegetables with rice or protein. 

Scrambled Eggs with Red Palm Oil 

Serves: 1

Prep Time: 5-10 minutes
Cook Time: 10 minutes
Total Time: 15-20 minutes

Ingredients: 

  • 4 eggs
  • 2 spoons of red palm oil
  • 1 spoon of olive oil (optional)
  • 1tsp garlic (minced)
  • 3 tbsp of scallions (chopped)
  • 3 tbsp of feta cheese 
  • 1 handful of mushrooms
  • ½ of a red bell pepper (sliced or chopped)
  • ½ of a yellow bell pepper (sliced or chopped)
  • 1 handful of chopped kale
  • Pinch of salt & pepper

Directions

Preparation

  1. Mince 1 tsp of garlic, or use pre-minced garlic.
  2. Chop scallions until desired size. 
  3. Slice or chop bell peppers to desired thickness and size. Use more or less bell peppers according to personal preference. 
  4. Chop kale. 

Cooking Method

  1. Add olive to pan and heat. Add scallion and garlic and let sautee for 1 minute. Add mushrooms, salt and pepper and continue to sautee on medium for 2 minutes. 
  2. Add red palm oil to vegetables, and mix. Sautee for an additional 1 minute. 
  3. Break eggs and pour on top of mixture without mixing*. Cover and cook for 3 minutes. 
  4. Remove the lid, and add chopped kale and sliced bell pepper on top. 
  5. Cover again and cook for an additional 2 minutes. 
  6. Remove the lid and mix ingredients together for 1 minute. 
  7. Remove from heat and serve hot. 

*Can also scramble eggs or mix together prior before pouring over vegetables if desired. This recipe can work with almost any egg variation – go with your preference or what works best for you and your daily routine!
