In this month’s edition of Palm Done Right’s recipe series, we feature a hummus recipe that slightly veers from the norm – with the addition of red palm oil.

Red palm oil hummus

Ingredients

  • 1 can of chickpeas
  • 2 tablespoons of red palm oil
  • 2 tablespoons of olive oil
  • 1 clove of garlic, minced
  • 1 tablespoon of paprika
  • ¼ cup of tahini
  • juice of 1 lemon (about ¼ cup)
  • sea salt to taste
  • ¼ cup of water

Instructions

  1. Drain liquid from the can of chickpeas. Bring enough water to a boil in a pot to cover chickpeas, then pour chickpeas in, and boil for five to seven minutes.
  2. Remove the pot from heat, and drain water. Pour the boiled chickpeas into a blender or food processor, and add the minced garlic, olive oil, and ¼ cup of water or less. Blend for a few minutes. If your mixture still has solid bits of chickpeas or seems too thick, add more water about a tablespoon at a time.
  3. Add the red palm oil, lemon juice, and tahini. Again, blend for a few minutes until the mixture is smooth. If your mixture seems thick, add some water or a bit more palm oil or olive oil.
  4. Once the texture is to your liking, transfer to a bowl.
  5. Sprinkle the paprika on top of the hummus, then cover the top with a thin layer of olive oil. You can also add a bit more red palm oil for a flavorful mixture of the two oils.
  6. Serve with crackers, pita, celery, carrots, or any other foods of your choosing. You can also use it as a delicious spread on sandwiches.
  7. Store in the refrigerator in an airtight container for up to one week.
