Ingredients

  • 3 cups flour
  • 3 cups granulated white sugar
  • 2 teaspoons baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground allspice
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 4 large eggs
  • 1 cup organic red palm oil
  • 2 cups unsweetened pumpkin puree
  • ⅔ cup water

Instructions

* Note that this recipe yields two loaves.

  1. Preheat your oven to 350 ºF. Grease and flour two 9” x 5” loaf pans. You can use different sizes depending on what you have available, but be mindful that the loaves will rise differently.
  2. In one bowl, whisk together your flour, spices, baking soda, baking powder, and salt until combined.
  3. In another, larger bowl, whisk together your eggs, sugar, and organic palm oil, again making sure everything is fully combined.
  4. Add your dry ingredients into your wet ingredients, mixing in a little bit at a time until the dry ingredients have been fully incorporated into the wet mixture.
  5. Add the pumpkin puree and water into your bowl, and stir together thoroughly.
  6. Divide batter between your pans, and bake for 1 hour. You can ensure that your loaves are done baking by inserting a toothpick into the center of the loaf and checking that it comes out cleanly. Baking time can vary depending on the pan size you use.
  7. Enjoy! These loaves are especially delicious while warm.
